I love grilled veggies, especially asparagus, potato foil packets, and this amazingly delicious zucchini. Once you’ve tried zucchini on the grill, you won’t want to cook it the other way.

When the hotter months come around, I find myself eating zucchini and other summer squash on a daily basis. Zucchini is inexpensive, widely available and healthy too! My favourite thanks to eating zucchini is during this grilled zucchini recipe. It’s so simple with ingredients you almost certainly have already got available, yet it tastes so delicious!

The first step during this recipe is to organize your marinade, which may be a blend of vegetable oil , fresh juice , dried herbs, garlic and seasonings.

You’ll want to let your zucchini take in the marinade for a minimum of 20 minutes, but it’s better if you’ve got the time to let it sit for a minimum of 2 hours. After the zucchini has marinated, it goes onto the grill – I exploit my charcoal grill, or if it’s not grilling weather, I choose my indoor grill pan on the stove.


  • I like to use small zucchini that I’ve to dig quarters. Cooking with larger pieces of zucchini helps to stop it from getting mushy on the grill. If you favour slicing your zucchini you’ll just confirm the slices are a minimum of 1/2 inch thick.
  • I use dried Italian seasoning in my marinade, which is widely available within the spice aisle of most grocery stores. If you don’t have Italian seasoning, you’ll use equal parts of dried parsley, oregano and basil.
  • Fresh juice is best here, don’t use the type during a bottle.
  • I like to garnish my grilled zucchini with fresh herbs like chopped parsley. If you don’t have parsley available, other great options are fresh dill, basil or chives.


You can eat grilled zucchini as-is as an entremets, but I often make extra grilled zucchini to use in other recipes during the week.

  • Salad: Coarsely chop your zucchini and add it to a tossed salad.
  • Sandwiches: Layer grilled zucchini with roasted peppers, fresh mozzarella and pesto for a tremendous sandwich.

I definitely think I’d need to say that grilled gives the simplest flavor though. to not mention, some gorgeous grill marks. Giving these grilled zucchini some Italian herbs and fresh juice really amped up the flavour and screamed “summer”!

These are very easy to form too. Just mix the dried Italian herbs, juice and water and add everything to an outsized ziplock bag and shake to coat everything well. This works much easier than trying to try to beat a bowl.
